This recipe was surprisingly tasty. I found it on the internet and I decided to try it. My chef was very skeptical about it because cold bacon is well, not that enjoyable. The ice cream was delicious and almost savory, which is what I was going for.
Ingredients
100g Buttered Popcorn
500ml Cream
100 g Bacon
400 ml Condensed milk
5 g brown sugar
Method
- Prepare the microwave popcorn
- Place the cream in a large mixing bowl. Add 3/4 of the popcorn to the cream
- Set aside in the fridge for 30 minutes
- Prepare the candied bacon by tossing the bacon in the brown sugar and then baking for 20 minutes at 200° Celsius turning over halfway through. Remove from the oven and cut into small pieces.
- Place a muslin-lined sieve over a bowl. Pour the cream and popcorn into the sieve
- Whip the cream until firm peaks form
- Stir in the condensed milk and the bacon and fold into the mixture till just combined.
- Cool down and place in an ice cream machine.

- Pour into a container and freeze until the ice cream has set (4-6 hours minimum).
- After setting, use a pacojet to mix it to a smooth consistency
