Popcorn Bacon Icecream Recipe

This recipe was surprisingly tasty. I found it on the internet and I decided to try it. My chef was very skeptical about it because cold bacon is well, not that enjoyable. The ice cream was delicious and almost savory, which is what I was going for.

Ingredients

100g Buttered Popcorn

500ml Cream

100 g Bacon

400 ml Condensed milk

5 g brown sugar

Method

  • Prepare the microwave popcorn
  • Place the cream in a large mixing bowl. Add 3/4 of the popcorn to the cream
  • Set aside in the fridge for 30 minutes
  • Prepare the candied bacon by tossing the bacon in the brown sugar and then baking for 20 minutes at 200° Celsius turning over halfway through. Remove from the oven and cut into small pieces.
  • Place a muslin-lined sieve over a bowl. Pour the cream and popcorn into the sieve
  • Whip the cream until firm peaks form
  • Stir in the condensed milk and the bacon and fold into the mixture till just combined.
  • Cool down and place in an ice cream machine.
  • OR
  • Pour into a container and freeze until the ice cream has set (4-6 hours minimum).
  • After setting, use a pacojet to mix it to a smooth consistency
